I've always used the easy cheat of buying the pasta sauce in those jars. Recently however, while I was frying tomatoes for breakfast, the idea of overcooking the tomatoes into a mush and using it as a base for a sauce hit me. This recipe takes a bit more time than most quick fixes, but it's good for those days when you wanna blow off some steam while you cook. First get out a pot, boil and cook some noodles. You should be done with the sauce by the time the water has boiled and the noodles have cooked through. 1. Preheat frying pan and coat with olive oil. 2. Dice up some onions, garlic, basil and oregano. You can also cut some meat into convenient sizes if you want, but I usually forgo meat. 3. Sauté the onions and garlic in the frying pan on high heat with a generous amount of black pepper. Add in and sear the meat if you're using any. 4. Roughly cut up two large or three small RIPE(important, they need to be juicy) tomatoes(No need to peel them) into wedges while the onions and garlic fry. (the water for the noodles should be boiling about now, so check on it and add in the noodles if it is) 5. Turn down the heat a little and place the tomato wedges in, peel side up. Stir the wedges around a bit. 6. Add in a spoon of salt and a quarter cup of water or wine. 7. The tomatoes should have basically melted by now, with the peels having curled up into little rolls. Pick out the rolls if you don't like them (I prefer to leave them in though). Adjust heat so it simmers as the rest of the tomatoes melt. Stir occasionally 8. Add in the basil and oregano. Makes two servings.
