Chinese cooking method often has you marinate the meat. Sometimes one of the ingredients in the marinade is baking soda, which tenderizes the meat but sometimes gives it an unusal texture. There are plenty of Chinese recipes where they leave the meat on the bone. Quite a few where they cook a whole chicken, then hack it into bite-size chunks with a big heavy cleaver. But Western customers complain about there being bones in the meat, so then they steer away from this. Beef is another matter. Chinese cuisine doesn't have slabs of meat like steaks or bone-in roasts. Maybe a pork chop, but that's about it. So what you get is boneless cuts, cut small enough for stir frying, marinated like I said.
